HOW TO MAKE MALAI KOFTA AT HOME IN 2020

INTRODUCTION

Firstly MALAI KOFTA is simple recipe which we can prepare in home we have to do some simple steps to make the KOFTA

STEP1; In this step we prepare one side KOFTA and CURRY

ingredients to be used in MALAI KOFTA

  • PANEER -150gm
  • BOILED POTATO-2
  • GREEN CHILLI -1
  • GARLIC  CLOVES-10 to 12
  • CHOPPED ONIONS -2
  • CHOPPED TOMATO-2
  • CHOPPED GINGER-2 INCH
  • ALMOND -6-7
  • CASHEW -6/7
  • ALL PURPOSE FLOUR MAIDA -2TSP
  • FRESH CREAM-50GM
  •  CHOPPED MIXXED DRY FRUITS
  • DRY FENUHREEK LEAVES or KASURI METHI-1TSP
  • CORIANDER POWDER -1TSP
  • CUMIN POWDER-1/2 TSP
  • TURMERIC POWDER -1/3TSP
  • KASHMIRI RED CHILLI POWDER-1/2TSP
  • GARAM MASALA POWDER-1/3TSP
  • SALT TO TASTE
  • BUTTER -1TSP
  • COOKING OIL FOR FRY

PREPARATION MALAI KOFTA

Grate the PANEER in a bowl and then we have to mash the boiled potato in the bowl and then mixed it add little salt red chilli powder GARAM MASALA powder in that mixture that it can be mixed carefully add 2 teaspoon of all purpose flour .mix it and knead it into dough .then later try to make one ball with dough, if dough is too soft add 1teaspoon Maida more mixture is ready to make KOFTA.

Take a small portion of mixture and roll it into small ball. Press inside with thumbs to make bowl shape add stuff little dry fruits inside seal the edges and roll it into ball dust it with little Maida like we have to do more make all the balls in the same

The balls are now ready and then we have to heat the balls in pan once oil is heated , reduce the flame to low medium .put 3-4 balls at a time , keep flipping the balls fry it on low medium flame till it turns golden brown, take it out in a plate or on kitchen towel .fry the remaining KOFTA in the same day.

Masala paste preparation

in this paste preparation we have to heat a pan add butter once the butter has melted , reduce the flame to low add almond and cashew , fry it for few seconds add ginger , garlic, green chilli and onion .fry it for 2 minutes on medium flame add chopped tomato into it turn soft 2-3 minutes , turn off the flame and it cool down .Take it out in a blending jar do not add water blend it into thick smooth paste masala paste is ready ,take it out in bowl

curry preparation

turn on the flame heat a pan , add dry fenugreek leaves and roast it for few seconds on low flame ,take it out the roasted KASURI METHI in plate keep it a side .Add 2tbsp oil in the same pan once the oil is heated , reduce the flame to low add turmeric powder and CUMIN powder coriander powder and cumin powder in the hot oil mix it and cook the masala for a minute on low flame .Add the prepared masala paste and keep stirring the paste and masala fry the masala for 2-3 minutes on low  flame keep stirring in between .increase the flame to medium and cook it for minute keep stirring add ½ glass of water,  Add ½ glass of water more and mixture the paste and masala add little water again if the gravy is to thick and stir it .Add salt to taste remember that we have already added salt in KOFTA and mix it .cook it for 2-3 minutes on low medium flame add fresh cream mix it well cook it for a minute on low medium flame add GARAM MASALA powder add roasted dry fenugreek leaves turn off the flame stir it. let the curry cool down a bit then add KOFTAs .Do not put KOFTA in hot gravy curry ,it may break take fried KOFTASs in serving plate pour curry /gravy on it ,put the remaining fried KOFTA in the curry garnish with little fresh cream.
